Our I-130 is approved and were holding off until our 2-year anniversary; we’ve been travelling solo or together throughout the process on ESTA without any issues.

I wouldn’t worry at all about travelling.

Ahh that’s wonderful news!

when you filled the I-130, did you just put your UK address or an US mailing address?
Within the pack, are we to include documents proving relationship Eg photos or save that for the interview and just supply the marriage certificate and residence at the same address?

We put the UK address. Just make sure to put "N/A" in all boxes that you're not answering; I believe there have been issues for some people in the past where they didn't.

We provided a little additional proof; council tax bills showing both our names at the same address, a statement from our joint account, a copy of our private medical insurance from work, listing both of us, and some pictures printed on an A4. That was enough for them.

I’m sorry for keep asking, it’s such a daunting experience, and I did not even believe it was this difficult.
As I am currently unemployed because I am studying for the US bar, do I just list my employments within the last 5 years?
I am guessing at this stage it doesn’t matter and it is only at the affidavit of support stage where I need to prove my assets etc? Am I correct?

i intend on writing a cover letter briefly stating our reasons for moving and I am studying for the bar etc, is that sufficient would you say?

Yeah; I'd prepare for a lot of interpreting the questions literally and trying the best. It's a bit of a challenge.

I would indeed list all employments in the past 5 years.

That would be for the later stage, I imagine?

The first stage, filing the I-130, does not care so much about the actual move. This is you proving that you are related, which therefore qualifies you for applying for the actual immigrant visa with the immigrant visa unit. Be sure to follow the dedicated guide listed on the embassy website about how they want to receive the information.

Not needed.   Don't include things that are not asked for or required.  When I filed the DCF I-130 for Mary in Mexico, the petition was actually gone thru by USCIS in front of me.  Anything that was duplicative proof they handed back to me.  Review the documents they prefer at https://www.uscis.gov/about-us/find-uscis-office/international-offices/united-kingdom-uscis-london-field-office.  Use the best eveidence.

The I-130 is more about you and the basics of the beneficiary.

The DS-260 Visa application is all about the beneficiary.
