Maybe: https://travel.state.gov/content/travel/en/legal/visa-law0/visa-statistics/nonimmigrant-visa-statistics/monthly-nonimmigrant-visa-issuances.html

For May 2019:

1 K1 visa placed into a Palestinian Authority Travel Document

5 K1 visas issued at the Jerusalem Embassy

Thank you for sharing, I'm aware of these stats, but they do not show the approval rates sadly, so I'm asking if there's any publication with approval rates stats, even if for 2018?

Check the USCIS for possible links for that info. Another avenue you should try is a Google search.

Not very likely to find much on that aspect of K1 visas in the K1 Progress or K1 Process forums.
