What if we wait until she gets her first pay stub and then file? Is that considered stable?

The problem is that it is a brand new job.  You really have no option for a joint sponsor?

Just curious, why did she quit her job, with AOS coming up?

That will depend on the IO that reviews your I864. The I864 instructions do state 6 months worth of paystubs (not less) as an option to prove current income though so it would seem to me that that is the standard they are going to compare you with if you are going to use paystubs to prove income stability.

Filing for AOS after your I94 expires is risky though. I would never recommend that.

Okay, if you have the information with you, could you please let me know what is required from a co-sponsor? and also what should my wife submit as her documents even though she doesn't have a job? I would love some help here and sorry for all the trouble, I'm sure you guys understand how stressful this is.

Have you read the AOS guides?  Also, the forms on the USCIS website have optional comprehensive instructions/check-lists that are extremely helpful.

Which financial documents are to be provided is based on the individual's financial situation and what boxes they will fill out on their I864

Your wife will submit her most recent tax return and proof of US citizenship as she doesnt have much else.

As for your joint sponsor (a sponsor that meets the poverty guidelines by them self) or a co-sponsor (a household member that combines their income with an original sponsor or joint sponsor in order to meet the poverty guidelines), you will need to have them read along with the I864 instructions as they are filling out the form in order to determine what documents proving income they will need to provide. Every individual is different as every individual has a different financial situation and what they will provide will depend on what questions they fill out and where those amounts are derived from.

So determine if you have a joint sponsor or a co-sponsor first.
