Sorry didn’t mean adjustment, meant for the affidavit of support. How long before the interview for visa would she have to be back in the US to prove domicile?

She can do a lot of things before the NVC like travel down, make sure you guys have a place to live etc.. the NVC is easier to please than the Consulate in Montreal.  I'd say however long it takes her to find a job down there and get her driver's license before the interview.

We will have a place to live immediately as we will be living at her moms house to start with. She is able to get a job immediately also through her father’s company. Do you think she will have to move back before submitting the I-129F petition, or before the consulate interview I would be having? 

Also, not sure if you guys will know the answer to this, as I am a UK citizen, am I able to go to the consulate interview in Montreal as opposed to the UK, obviously as we are currently living in Canada Montreal is the easier place to get to.

She needs to prove domicile at interview.  You need more than "oh we can live here" like a lease or rental agreement, driver's license, proof of a job with pay stubs, not just employer offer letter.  Montreal is pretty strict on this. 

Yes you can interview in Montreal provided you are still legally present and not a tourist.  (aka you have a work visa, PR status, etc..)
