Just had our interview today at the HCM Consulate and my fiance's K1 visa was approved.  Was curious how long it took people to receive the passport/visa back in hand after a successful interview with no blue slip?

Congratulations!  In May 2018, my wife's K1 visa took 11 days from the day of the interview to delivery in Da Lat.  In December, her son received his visa in 12 days to the same city  We paid to expedite both,  but I  don't  think it made much difference.

One follow up question.  When you looked your HCM Case ID # on the CEAC tracker after your interview, did it go into an administrative processing status or something like that while they printed the visa?

Yes, for both my wife and her daughter and then later for her son, CEAC changed from Ready, to Administrative Processing, to Issued.  Administrative processing is standard.  It just means that the interview has been completed and the consulate is working on their end to prepare, print, and mail the visa to your fiance.  Don't be concerned if it changes back to "ready" from administrative processing, it just means they are working on it.  In my wife's case, she interviewed on Friday and CEAC changed to "issued" the following Wednesday.

No, my wife's stayed "Ready" for the remainder of the day of her interview (Friday) and also Monday.  It changed to Administrative Processing Tuesday, and then Issued late on Wednesday.  RIght now, you have a verbal approval and they have marked your file as approved, but you need to wait for the consulate's administrative staff to actually enter the approval into the system.  It should be soon!

So, interview was Tuesday the 11th.  AP status on the 12th.  Issued status on the 13th.  Was delivered by courier on Monday the 17th in Ho Chi Minh city (paid the 115,000 vnd for premium delivery) about 4 hours after the consulate handed to delivery company.
