I’m currently freaking out, in my i129f petition, my fiancé’s name in my phone was  “Mi Esposo” (my husband in English), how big of a problem could that be? Should we both look for legal documents stating we aren’t married just to be safe? I’m about to have an anxiety attack over this, our interview is 6/3

They may or may not ask about.   They may or may not care.   Just formulate a proper answer in the off chance they do.

YMMV

Have people had their phones searched?  Yes.......  Is it likely?  Probably not........   Proving you are not married is near impossible.....

No one can really tell but I would assume it not big at all - just explain if asked.

A few years ago I filed -129F with traditional wedding photos, wedding reception, and pre-photo wedding album. My ex and I just did not register for our marriage to make it legal one. but my ex K-1 visa was approved. I am not saying doing what I did was fine. However, there is chance for some accidents being ignored.

How would they go through phones if they’re not allowed in the embassy? I do have my tax returns where I filed single. I read I can go to a county office and get something that says I’m single?

Would a proper answer be something like “it’s just a pet name, we plan to marrying on July 9th” for example?

1.  I was referring to CBP officer who sometimes look through phones at the point of entry.......

2.  Anyone can file as single.

3.  There is no central marriage registration in the United States.  The ONLY thing you can provide is a sworn statement that says "I am not married"........and if you present that at the interview, it very well could raise suspicion.

Also, should I change his contact name before sending chat logs with our evidence binder? I’ll be at the interview as well.

No.  I did include a cover letter and explain in my petition that even we had wedding, it was not legalized by Vietnamese Law (It is called Vietnam Marriage and Family Law). Basically, the law states that a couple is only considered legal marriage if and only if that couple registered with Vietnamese government and received the official marriage certificate.

That’s not very comforting, these next two weeks are going to be full on anxiety😅

You call it what it is.  That's a reasonable explanation
