Yes . You can apply. 

 

You probably have to wait until you get ead to get a ssn anyway. Or if your spouse just arrived, wait another week or so and go to the ssn office again.

Yes you can apply for I-485, i765 and i131 without the SSN. You can even apply for a replacement SSN card on the i765 just in case you don't get one from your local SSA. Just explain in the additional information section that you have applied but to have not received it yet.

Meaning you applied in her married name instead of her maiden name as recommended?

All the more reason to apply in her married name on the I765.

We applied for SSN and it went to manual verification. We declined applying for SSN when we sent in AOS paperwork and we received his SSN card in the mail about 4 weeks after we initially applied at the SSA office.
