I-134 and Evidence for Self-Employed CO-SPONSORS

I guess this question would be for myself and my co-sponsor.

 

My fiances uncle wants to co-sponsor. He is self-employed. Aside from the completed I-134, 2018 Tax Returns or Transcripts (Our Embassy only requires 1 year tax returns), what else can he provide? He obviously cant get an employer letter or paystubs since he pays himself through the business Im sure. But his accountant is standing by to see what else he can provide. I also am part-time self employed, part-time W2 by state of CA.
