If I'm living in one country and my wife lives in the USA can i put her on my life insurance as a beneficiary in the country im living in?

That is a question for the insurance company and not an immigration issue.   It should be allowed

Don't see why not. It's your life insurance policy, can add whoever you want to it.

That depends on the laws in your country.......there is no US law prohibiting it.

I understand i can add whoever I'm just asking if this is admissible by the USCIS

It is not an immigration issue.........you could use it as a piece of evidence showing relationship.

As long as the provider allows it.  Mine offers an online account which allows to edit the beneficiary's info: Name/Relation/Address.

Like @missileman said, it has nothing to do with USCIS or immigration. You can ask the provider of the insurance, but again why it would be an issue I don't know, your spouse, regardless where they are, is next of kin really and they are generally always the primary benefactor of a policy.
