Ours updated within 5-7 days as well.  Each office and case is unique, weird, and who knows what USCIS is thinking.

I remember that when I called USCIS to ask why they didn’t update it, they told me that updating the website is not a priority so I shouldn’t trust it. I was like ‘whattt?!’ This is the only way for me to see if my case is doing okay or if it is somewhere in the garbage (which fun fact by the end it was). Anyway my point is they are unbelievable

They are!  Yesterday we got the notice of "fingerprints" in our AP, even though we have the combo card and the case (at some point) had said "approved".  WEIRD!

We got the "fingerprint" notice the same day of doing the biometrics - it updated on both the AOS and the EAD, but not the AP. Now AOS is still currently pending with RFE, EAD has fingerprints status from December and AP has never changed from "we received your form" (November).

We called USCIS tonight to request to expedite my husband's EAD (he already has an active job offer 🎉). If anyone would like more info on that process let me know!

Do I literally type up a document like that and sign it? Seems kinda sketchy that I'm doing my own translation and then certifying my own work. Do I need to get it notarized or anything like that?

I did exactly that, no notary, typed it up and signed it myself and didn’t run into any problems because of it.  We mailed our application back in August.

Yes, you literally do.  It is not sketchy.  The official USCIS website even says that just having one sentence written up stating you are both fluent in Spanish and English to translate the documen will be sufficient, so this is taken from them.  No need to notarize it or anything.  However, DO make sure you translate it all (birth certificate, apostille, and legalization).  Additionally, @andreaam did it this way along with others and we did ours professionally such as @andyazcu yet both Andrea and I (who did it completely differently) got RFEs for birth certificate.  So, it is your personal decision how you will go about it, but nothing about the USCIS process will be a definite and you can get RFEs on anything and everything, even when you do things perfectly (as most of us have done in this thread).

So Can I just do the same to translate proofs that are not legal paperwork for the interview?, my legal docs are already certified and translated by a professional in Buenos Aires. The stress is killing me, my interview is the 30th of this month 🙃

My gut would tell me that anything non-legal you can translate yourself and indicate you are fluent in Spanish-English.
