Of course.  The interviewing officer will accept or not based on there review of the evidence

They will likely issue an RFE. Previous two years don't matter much, and the current year doesn't matter much either; it's all about the most recent tax year, though 6+ months of pay stubs in the last six months often work out. 

 

I would line up a joint sponsor. When the interview rolls around, ask to replace the I-864 with a joint sponsor, with the I-864 without, since enough time will have passed--if you wish to. 

 

@payxibka is setting you up for a possible, and likely, RFE that can be avoided.
