We are approaching final steps, all that is left is the affidavit of support, I am not sure if we should look for another sponsor or include cash in the bank and how much.

My husband was unemployed for 2 years, in 2018 he started working as self employed and his tax return shows that he made $24000.

We don't have kids, it's only me and him.

Is this enough? will my visa get rejected due to the fact that he was unemployed?

Do we need another sponsor? or maybe my father can transfer some money to my husbands bank account, but how much is needed?

You won’t be rejected if it’s not accepted but you may get RFE for a joint sponsor 

 

You can avoid the possible RFE by submitting a joint sponsor at the NVC stage .. the Interviewing Officer  will make the final decision

 

Prior income isn’t as much of an issue as current income and adequate evidence. Read the I864 instruction sheet very thoroughly to see what documentation is needed for self employed 

 

Assets can be used .. but they are looking for longer term held assets rather than a one of transfer into an account 

 

joint sponsor by a parent would be better than a one of payment in my mind

It's all that is needed as the required 1 tax return AND as evidence of current income, for self employed.  But he will need to submit the actual I-864 too.

Facts are cheap...knowing how to use them is precious...

The USCIS  INSTRUCTIONS state the Schedules  C, D, E, F  from last tax return demonstrates income for self employed Yes, these form part of the Tax transcript

You can also submit things like statements showing deposits into the business bank account, quarterly cash flow , profit and loss statements .. but the instructions are annoyingly silent on this

Your answer was in the post you quoted.  The latest tax transcript IS what it IS, AND the evidence of current income.  It's both.
