For the copy

Do I need to duplicate everything including make a copy of the check I send in?

Also, since I'm adding the I-134, do I need to adjust the cover letter contents to include it? Or does that just all stay a direct copy and the I-134 go separately? If I go by the guide, I don't send the 134 in, it gets handled during the embassy visit.

Then there is the addressing, do I adjust it to the Embassy or leave it as it was when sent to the Dallas dropbox?

I assume this copy goes to the embassy? However it states that the embassy should already have a copy. So is this more for my records? If so, why should it be sent there? Unless it's just in case it's needed by the embassy?

You don't send the i134 with the petition.   The copies are for your records

YMMV

So what I send to her is just the I-134?

In theory.  If you want her to have a copy of the petition to study,  then go for it

YMMV

I can pretty much just give her a digital copy.

According to the guide on this site, what goes to her is the I-134, bank statements, tax return (I'm self employed), and proof of the relationship. Correct?

But you have many months before it is needed

YMMV
