Timeline

What i am trying to find out is: Does the header on the  "letter of intent" has to be different for HIM and for HER ? since Fiance (male) - and fiancee (female) ?

Since my gf sent me a letter With a header "Fiancé Letter of Intent" .

Much ado about nothing.   Doesn't matter.  Isn't even required

It's fine that way; don't overthink it. Most people don't know nor pay attention to the distinction between the two.

Bless you for actually caring about the using English properly, but most people (including most at USCIS) do not even know there is a distinction. You will be fine using either.
