I see what you're saying. I presumed this new job was a sure thing and didnt notice the start date was so far off. I presumed she would input her new employer though.

She could update the I864 with current income if it was to her benefit at the interview which would give her plenty of time to get 6 months of paystubs under her belt.

Correct - they can report past income but not current income. That can help address a public charge concern since the history is good and there is upcoming employment. However, it does not meet the statutory requirement minimum current income threshold in order to satisfy an I-864. One must meet the minimum 125% level in current income (or assets) to furnish a satisfactory I-864. This is separate from the overall public charge question. Without that, an RFIE is very likely to be issued, not just updating it at the interview.

Thank you @missileman for your response, I have one more question, so will the letter showing current employment, 2018 tax returns, previous job pay stubs suffice for I-864? I won't have any pay stubs from my new job at the time of applying for AOS.

By current employment I mean my new job which I will start on June 17th 2019, so a letter from my new employer, my 2018 tax returns, and previous job pay stubs, will all this suffice for I-864 since I won't have any pay stubs from my new job when I file for AOS aroud June 17th?

I would wait till you get at least the 1st paycheck and then file for AOS. While you can file for AOS on June 17 like you said, you will likely get an RFE for i864 later on by which time you will have bunch of new paystubs. However, with latest USCIS policy revision where the adjudicators are given green light to issue straight denial in place of RFE, are you gonna take that risk?
