Well, it finally happened. The dreaded K1 interview is now history. Just waiting on the medical results and to get my passport back.

Question is what do I do with all the paperwork? Weight is critical and there is a ton of it. Do I need any for adjustment of status, getting bank account/drivers licence, social security number?

Or can I just shred the lot except for originals like birth certificate etc?

I am assuming you mean weight in the luggage?, if you have copies and you know you can make more, I would eliminate the copies, unless they are certified copies then I would keep those.

but I would also carry those things in your carry on luggage and not check them.

Keep a digital copy of your paperwork (you can carry it with you in a CD, uploaded to a cloud - whatever feels safer to you). Your file is inside the brown bag you will have to take with and give to CBP at the point of entry (they will keep it).  Check out the guides at the top of this page on what will be needed from AOS. You won't need any of the K1 specific paperwork but you will need other documents, such as your birth certificate again, for example.
