My fiance files a 1099 (self employed contractor but he does have a job lol) so does not have any W2's or pay stubs. 

 

He has a letter from his employer and his last three years tax returns.  What else do we need? copy of bank statement? bank letter? copy of deposits?

He uses his iRS tax transcripts from IRS like we all do   / it will show all pages including Schedule SE for self employment income and expenses

I visited the embassy's website and I found this which really doesn't specify distinctly any proof other then the completion of the I134.

 

K and Diversity visa applicants are not requiredto provide an I-864 Form.  However, they must show evidence that they are not likely to become public charges while in the United States. There is no set for that this evidence must take but use of the form I-134 is an efficient way to provide this information to the Consular Officer.

 

look over these general requirements and I feel you should be fine.

 

EVIDENCE OF SUPPORT. You should be able to demonstrate that you will not become a public charge or be a burden on the U.S. taxpayers for financial support. A completed I-134 Affidavit of Support Form (https://www.uscis.gov/i-134) K1/K2 Interview Preparation Instructions – English (February 2014)  Page 3 of 9 with an original signature will be useful to the consular officer to evaluate your petitioner’s ability to be financially responsible for you. You should also submit your petitioner’s most recent U.S. Federal income tax return (Form 1040) and wage statements (Form W-2). Employment letters stating salaries and bank statements may be included to substantiate the I-134. Get the IRS transcript in place of the actual 1040 here: https://www.irs.gov/Individuals/Get-Transcript Use this link to determine the income levels needed https://www.uscis.gov/i-864p.

Many people file as "self-employed" and many file both W2 + 1099-MISC. W-2 or 1099-MISC is just a part of 1040 so there is no difference: his tax transcripts like W-2 people.

Typically no. They like to see it in the most current year meeting or exceeding the income level for your family size.
