I-864 or I864EZ and/or Joint sponsor

Most of 2017 and 2018 I didn't really work, was in school and just started working in September 2018. I have filed jointly (ITIN for my wife) for the last 2 years '17 & '18. 

 

For 2018 my income was 16k since September (21K is what I need for a household of 2, wife and I). So my last year taxes do not reflect a whole year but so far for this year my YTD is over 20k and I have the paystubs to prove the income this year. 

 

My question is would that be sufficient to use the for EZ since I'm basing it only on my income? I would upload/submit paystubs or do I need the 864 since in part 7 gives the option to add supplemental income. I have about 40k in savings and additional income from the military (disability) which is around $1400 monthly. Or should I shoot straight it for a sponsor and play safe.
