Evidence question pertaining to I-751

I have gathered all of the important stuff:

joint Bank Statements, joint Tax Transcripts, Joint Leases, Joint insurance

but for sending in some greeting cards which were sent to us by family, I did not retain the envelopes in which they came in.

Can I still include these greeting cards for evidence without the envelopes?

You can include anything you think is evidence, although I honestly don't see a need for the cards in your case. The other pieces of evidence you listed are much, much stronger.

I would not mind the cards, try to add utilities bills instead if you can

Selection of cards is fine but not every one.
