Has anyone moved back to the US and taken up employment with a parent or family member?

My parents own a business in the US and can provide me with employment. However, it's a small rather informal business. They don't have company letterhead or an HR department etc.

Would an employment letter signed by them including the details of the business, my position and hourly wage suffice as proof of employment?

Will you be working or it an offer letter?

It can be either or. It's an open position any time I move back to the US.

So I could either include it as an offer letter at the NVC stage or I can submit it as an employment letter at the interview stage.

As I mentioned, it's a pretty informal business so I would be paid by personal check bi-weekly for my hours. If I submitted it as an offer letter at NVC stage and supplied copies of the checks to my spouse to show at the interview stage (for the weeks I had been paid since I returned to the US) would that suffice?

I'd be working with them either way, it's just a small family business so there's no payroll and paystubs and all that.

You should get paystubs showing you've been paid and that taxes are appropriate. My ex worked for a family business. Just 3 employees, mom, dad and him, but he still could see what he was paid and the taxes removed.

Are you asking if this will be okay for domicile? I dont know. Possibly.
