Wife and I just applied for removal of conditions (I-751). We just got electronic notice it was received a few nights ago. Haven’t received the extension letter yet, but NEED some proof of lawful residency since her green card expires next month and the school she’s enrolling in this month won’t accept it as proof of residency. Made an infopass apt for the morning - will the extension stamp work for her? Or can we request the official letter there?

Yes - IF they will give it to you now. Card remains valid as proof of status until the expiry date.
