obtaining single status certificate (split topic)

You can get it while in the U.S., but it requires not only notarization, but certification of the notarization by your secretary of state, and certification of THAT certification by your Chinese consulate. That can all be done by mail, but you would need to either take it to the consulate yourself, or pay a visa service.

 

OR - it can be done in one day with a trip to an American consulate in China - see Affidavit of Single Status

Thanks for that link.  What I'm also trying to figure out if there is a standard form that I should download that is in English and Chinese so that when I get married in China, they will accept my affidavit of single status.

The link includes several sample forms. If you get it done in the U.S., the consulate's certification will include a Chinese label identifying the document as a single status certificate.
