Gearing up to send our joint I-751 ... excited and worrying is the mode .....

would be great to hear from you . your take on our list ( brief story I'm Egyptian. and my wife american. she is younger than me. we lived almost year and half in egypt before we moved to USA after i got my CR1. my wife does not work)

we still thinking to power of attorney and will? any advice on those...

we are worried list is not enough

You have a very strong list honestly.

You shouldn't need to send anything they have already seen, or pre-CR-1 visa, but if you want to you can.

I agree, your list if very extensive.  As to the Wills and Living Wills question, I would recommend getting those for any married couple so now is as good a time as any.

I was thinking about submitted only the things we have beyond entering USA but I saw some threads advising to add everything since marriage.. good luck to everyone and Merry Christmas to all of you
