taking classes while waiting on greencard and employment authorization

We are still waiting for our NOA2, but I was wondering if it's possible for the beneficiary to take classes at a local college while waiting on the greencard and authorizations (after we are granted the K1 visa and beneficary is in the US).

Sure. The specific institution may or may not treat them as an international student, though. International student tuition is significantly higher.

My wife started taking classes at the community college 2 months after arriving in the U.S.  After supplying documentation for our marriage and her legal address in the county, she qualified for in-county tuition, which is about 1/2 the out-of-county rate. 

 

Sallie Mae does offer private education loans that the beneficiary may qualify for with a U.S. citizen co-signer.  The interest is a little higher.  These loans can also be used to take classes that do not lead to a certificate or degree.  My wife has her green card now, but got one of these loans for the Spring semester for a series of continuing education classes that don't qualify for standard student loans.
