Green Card Signature Required Issues

Hi everyone! We finally got approval for a Green Card (from K1) and it got mailed.  USCIS has our most up to date permanent address however due to my job (I'm the petitioner) we regularly travel between two states.  Right now we are in TX but our home address is VA.  We will be in TX for about 3 months due to my job.  My SO (the beneficiary) is not in VA to sign and the green card came.  My father lives at our same address but he was unable to sign as it's mailed restricted delivery and my SO is here in TX not in VA.

At our final immigration interview I mentioned this to the officer as there was some concern about us having to live together, I explained we travel and my job causes this and everything was fine. I did not update my USCIS address as TX is not our permanent home.

My question is, does anybody else have any experience with this and what can we do? I saw Postal Service Form 3801 which seems to suggest another person can be designated to receive a restricted delivery however I am unsure how to file it as it has no instructions and also if we could file it in another state, at another post office.  My local post office referred me to the USPS customer service hotline but I've had no luck.

We are very worried and I would appreciate any advice.  Thank you!
