Well, he is not gonna graduate until May, but we're thinking of starting the process in the next month, and after he graduates he can find a job above the poverty line and sponsor the k1 visa and by the time of the interview he is gonna have had a job for a few months already, but would that be time enough? Or you need to have worked for a longer period of time to sponsor the K1?

There is no requirement for length of time a sponsor has worked.  Immigration officials are concerned with current/future income levels....

Registered Nurse- Retired- I practiced in the areas of Labor & Delivery, Home Health, Adolescent Psych, & Adult Psych.

IT Professional- Retired- Web Site Design, Hardware Maintenance, Compound Pharmacy Software Trainer, On-site go live support, Database Manager, App Designer.

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

I'm no expert but you may way to wait until he gets the job. What are they studying. Arts math computer science  engendering.  Are jobs open ? Ido wait till jobs are at least offered. My oldest is in his final year of university and has a job offer from Apple in California. Education doesn't meet a job it helps but avoid the waste  wait till he has offers. We are Canadian but apple can jump him to the front of the line

No need to waste time waiting. USCIS/NVC/EMBASSY all are looking for stable income that can be documented. Many here have walked into their interview with only a few months of work history. US Government understands that a new graduate may not have a lot of experience but what they want to know is can he earn a living that will keep you guys out of poverty. And it seems like you have answered that question.
