Timeline

Are the USCIS officers at the USCIS office ask to write (in the writing test) only what is on the vocabulary writing list? Or could it be something from outside the list?

I believe that the writing test has phrases similar to the questions in the civics test.

My reading and writing component was dead easy (and yes it’s vocabulary you’d know from the guide). Bear in mind that the bulk of the English test is not reading one sentence and writing one sentence, but comes through the conversation the interviewing officer will have with you.

Being able to read one sentence and write one sentence doesn’t prove much other than that you can read and write. You will probably be talking to the officer for anywhere between 15 minutes and an hour.  Your ability to communicate in English will become quite apparent during that.

I am a member in a church, should I mention it?

Yea, you can mention it. In my interview I mentioned a student group that I mentored at work. The officer said that's fine. I am guessing you will get a response of "it's fine" from the interviewer.
