So I received my medical back from the visa doctor. I vaguely recall reading that you're not supposed to open anything, but can I open the purolator package that the items were mailed in?

Never had it in my hands myself since my doc sent it directly to the consulate but why do you want to open it in the first place? I would just leave it as it is to be safe. If you are curious text the doc and ask for copies. That's what i did and the doc offered himself.

It's just a very large package, so I wanted to make it easier to travel with when I have to go for my interview.

Yes you can open the purlator package. 

The medical will say do not open

As NiklR said - usually it's written on the packet as i heard. Similar to the packet you get for border patrol with your passport. If it's too big I would open it too I guess. It should be a packet in a packet. Wonder why they used such a big packet for these few pages 😅
