I am applying for a K-1 for my fiancee and have a question about the accompanying I-134 in regards to income. I make over 125% of the poverty level for 2 people, but not by much. Should I include my savings and stocks, which is a significant amount, or is being over the required poverty level simply enough? I am self-employed if that is a factor.

Yes. Specially when being self-employed. Making close to the poverty line can sometimes not be enough for the embassy so they will ask for a co-sponsor. Add your assets and you should be good.
