So I need a Verification of Employment Letter. Went to my boss today to ask for one and she looked at me like I was crazy and told me she’ll “look into it.” Can’t get them to give me one. I don’t know what to do now.

That’s pretty dumb, this is a fairly common thing. You might want to google some examples (you won’t have any trouble finding them) and offer them to your boss.

 

If your boss doesn’t want to help, do you have an HR department that could offer something similar?

If there is an HR department then maybe it's better you deal with them. All what they have to do is make a short letter (using the company letterhead). There are samples online. It takes 5 minutes. Let us know if you got one. Good luck.

I had one with me for my interview in 2015. It was one of the many many documents they never asked for. Along with the photo's, the ticket stubs to name a few. Unless they have changed a lot recently I would not worry about it to much. They do like tax returns, the gentleman stated anything official government like is appreciated.
