Fiancee had interview, consulate requested co-sponsor despite me meeting poverty guidelines. Need advice

As the title says, my fiancee had her interview in Guangzhou, China. Everything went well, but the officer only took my tax forms and nothing else. I just graduated from college in May, but have been working since last year to meet the visa requirements. Initially it was fast food which was all I could do while I was a student, but in April I began working in my field making more than enough money to meet the 100% and 125% requirements. Because of this, my previous tax forms do not reflect my current financial situation.

My fiancee came back from the interview with a documents stating that we needed to find a co-sponsor. My parents do not live in the US and I don't have anyone I can ask this of, so finding a sponsor is a very difficult thing. I've been trying to reach the consulate but they only have a 280 character limit on their contact form and it's been very hard to properly communicate. All I have gotten from them is form emails not offering much help and basically telling me to do what they say.

I don't really know what do to, I have documentation that proves that I am fully employed earning more than the poverty line, my fiancee took these to the interview and they didn't even look at it. Is there any way to get the consulate to look at these so my income can be verified?

If anyone has any experience with this or any suggestions I would greatly appreciate it.

the only thing you can do is resubmit your current job and all your pay stubs and a letter from your employer.  If they dont accept that, finding a co sponsor is really all you can do

That's what I had in mind, I already wrote a cover letter detailing my financial situation and listing the attached documents. I got a letter from my employer, I'll also send them my offer letter and my paystubs. I can't really think of much more that I can send with that.

remember, co sponsors dont have to be family. If you have a friend who is willing that is allowed also.

It's probably because the job is new so your last tax returns do not reflect the required financial assets.

As others have said, it's worth a try to resubmit your information with a letter from your employer, perhaps, confirming your current salary, and maybe confirming this is a permanent position and not seasonal/contract/etc. Otherwise, all you can do is what they've asked, and find a co-sponsor. Someone else already said this, but a co-sponsor does not have to be family. Good luck!

Håll ut, y'all.
