Hello, I'm new here and am just now applying for a K-1 visa for my fiancé who is from Japan. I was filling out form I-129f when I noticed that at the top right the expiration date has just past. August 31st 2018.

But that's the only version they have up on the USCIS site. Do I have to wait for a new form or is this one ok to submit?

You should be fine submitting that form, the expiration date is not for you, but Office of Budget. From USCIS website:

Having said that, today is USA Worker's day holiday. Maybe they will upload new form as soon as tomorrow. Do you have all documents ready to go otherwise? If not it might be worth your peace of mind to wait a bit for new form to be uploaded.

Usually they will accept the old form for a month or so after a new form is published.  Since there is no new form available yet, you should be fine, but keep checking, if a new form shows up, you may want to switch them as in general, they will most likely be very similar so they should be easy to transcribe.
