Got engaged in Vietnam on June 24 2018. When I returned home I immediately filled out the paperwork for a K1 visa. I mailed the papers off on July 13, 2018. I received my receipt from USCIS on July 20, 2018. So now it is time to play the waiting game.

Congrats! We did the K-1 and interviewed at U.S. Consulate in Saigon. You can take a look at our timeline. It was a pretty smooth process. The interview in Saigon was the craziest part. Just make sure to take copies of everything when you go to the interview. Both of you need to be familiar with the records, your time/travel together, family members, where you work, etc. You will be interviewed by one or two consulate officers and they can speak Vietnamese, if needed. It is an interesting experience - enjoy it. Visa package will be delivered to fiance address 7-10 days later by EMS courier. Make sure you have your passports and invite letter when you go to consulate. Arrive early (7 a.m.) and don't talk to the scammers hanging out in front of the consulate. They will try to rip you off. Good luck!
