The boarding passes prove that you and them met in person in last 2 years, that is all. Once your petition gets approved, and it is in K-1 visa and in person interview stage your fiance will need to in-person prove you still have bona fide relationship. I, personally, do not see how boarding passes will be helpful in that case. You do need to send (digitally is fine) completed copy of 129F to your fiance. Are you planning on being present for the interview? If you are, I think it will be a lot more convincing of your bona fides than some old boarding passes. Prepare some records from your chats etc to bring to Interview as well, new pictures, etc.

I didn't make a copy of the i-129F form either. Once it's gets approved proving the relationship is no issue. I do not plan to be at the interview. My fiance lives in Europe. I could go if I was given enough of a head's up.

What happens if he doesn't go to the interview with a copy of the i-129f?

If I recall correctly, the embassy will have a copy of the application. It is recommended that your fiance takes their copy, but let this be a lesson: make a copy of EVERYTHING.
