We use the term "side load" for a reason.  It IS a thing.  Whether it is important or not is another question.  Consular Officers are not required to consider relationship evidence that was not included with the initial petition, and often do not.  In any event, examples of how and how frequently you communicate, do not need to be translated if they are in the local language where you will interview.  The same goes for police report and birth certificate, etc.

I'm assuming that I send translations (birth certificate, police records, etc) to NVC? I know they aren't needed for the interview. Thanks for your help.

You'll send copies of applicant civil documents to NVC and take the originals to the interview.  Unless you are interviewing in a third country, you do not need translations at the NVC stage.  For example, if you are interviewing in Paris, a French Police Report and French Police Report would NOT be translated.  If interviewing in France, a police report or or birth certificate NOT in English or French WOULD need translation.

Further,  I'm not even sure if chat logs even carry much weight since they are secondary evidence. On the other hand, I'm afraid to not include at least a few. If the CO is the one who reads them, then I'm sure he/she knows Spanish. Translations are costly. If I were to do them myself, it might come across as if I altered the content. I'm just thinking out loud and your thoughts on this would help.

There is no reason to send more evidence to the NVC.

Actually, for some people there is.  These would be the folks with red flags in their case, that were not addressed with adequate evidence initially.  "Sideloading" at the NVC stage is not as effective as "frontloading" with the petition but it is often better than nothing.

We didn't get an RFE. So, how would we determine if there are red flags?

You would do a lot of reading here on VJ to learn what kinds of relationship circumstances raise red flags about whether the relationship is genuine.
