Will my current valid J-1 student visa be cancelled if I apply for a new one from another sponsor school AND it's denied?

No no, the restriction doesn't mean you can not change status.

If you change to F1, the restriction is still there.

You cannot change status WITHIN the US. Adjusting status means changing from one status to another within the US.

 

When you have a J1 with the 2 year requirement you can only change status to F1 by leaving the US and getting a visa.
