I was the same: arrived on K-1 visa, then filed I-485. For Current Immigration Status, I put 'K-1, Pending Adjustment of Status'. Don't know whether that's the 'right' answer, but I was approved without interview, so didn't cause me any problems.

Tamara, since you are applying for your EAD, are you also applying for your AP travel document i-131? Always advisable to do so in case you need to make a trip abroad or in case an emergency arises. The EAD and AP fees are waived when filing jointly with AOS.

Yes, you can write K1 visa holder, pending I-485. Something like that.
