Proving intent to reestablish domicile

Timeline

My husband and I live in Ireland, he is a US citizen but his family moved to Ireland when he was 10. As a result he only has income here in Ireland so we got a joint sponsor. We are now just waiting for our embassy appointment letter. I have heard of someone recently in the Dublin Embassy, despite having a joint sponsor, being told the US citizen (spouse) ALSO had to have either a job secured or a job offer. My husband plans to move when I get my visa, which as you all know is impossible to predict accurately when that will be. This means it is very hard to convince a company to offer you a job if you don't know when you will be able to live there. 

We do have a bank account he has kept open in the US since he was like 14, he just renewed his drivers licence on a trip to the US last month and we have a lease on an apartment in the US starting in August. 

Has anyone else had this issue/do you think there is anything else we could get that doesn't include a job offer that would help - we'd really like to not have him move before me just so he can commit to a job, as obviously moving away is going to be a tough time and I'd rather not be doing that trip on my own. Appreciate any help!

The apartment lease should certainly help, though it can often prove difficult to demonstrate domicile when the US citizen relative has been out of the US for a number of years, as is the case here.

Sometimes we need to change our plans.  Google "providing evidence of intent to establish domicile" for some ideas.  He can't just say that such a thing does not fit with his "plans".

Facts are cheap...knowing how to use them is precious...

We do know our plans may need to change, we're not going to put the whole process at risk so close to the end now. We just weren't aware until now that they could require him to have a job already even though we have a joint sponsor. We have googled and from that gather the stuff I mentioned above, just looking into options here to see if anyone else has experienced being asked for this. Ideally just trying to avoid having to move across the world on my own if it isn't necessary for him to move before me.

I understand there are financial considerations, but him moving before you does not mean you must move on your own.  He can come back and move with you.  If they require him to have a job, it will delay your visa.  You won't know that until the interview.  Have a concrete plan and you may well be OK.  If you don't want to risk delay, then he needs a job or job offer.
