Next ship date should be October 2nd as you said.  There are still appointments available in October.  Just all depends when you are READY to schedule.  They usually only have interviews for K1 on Tuesdays but they opened up October for Monday interviews too.  Mine is in transit as of today

HI all - I'm preparing the documents to send to my fiance for his interview. Does he need my physical birth certificate as the petitioner, or will a copy of it suffice? I know he needs his physical birth certificate, but I wasn't sure about mine. Any other tips of things to include in what I send him? Our petition left the NVC today and is on it's way to the embassy!!! Thank you!

My fiancee stayed at the Windsor Asturias Hotel

 She said it was a 5 minute walk to the consulate

She had a copy of my BC and passport.

It's was so simple and quick. She was very nice and just asked how we met, how we kept our relationship, what is our wedding plans and if we took any trips in Brazil when my fiance came. That's all! My advice is don't overthink it. It's much easier than it may look. And about the documents, as many people said before, they only asked for the documents listed on the website. No further proof of relationship was required.
