Card will be marked that the person in question cannot work.  When that person gets PR status, that same person has to go to a social security office and apply for a card that has no restrictions against working.  The general practicalities:   In the interim, a K1 visa holder gets a card that prohibits work.  When AOS is filed and a work permit is issued, a new card will have to be obtained that states work is allowed with restrictions.  Only when the coveted I-551 stamp or green card is obtained can one get a unrestricted number and card.  In each of these cases the social security number itself stays the same.

More precisely, the card will be marked "VALID FOR WORK ONLY WITH DHS AUTHORIZATION".  That doesn't mean that the person cannot work.  It just means that they can't use their card to prove they're allowed to work, they need additional documentation for that.

Well, that person doesn't have to.  They could just as well keep using their old card.

So can the person work with that ssn card when they get their EAD? Or do they need to go back to the social security office? Or do they have to go back when they get their green card?

They can work right away as soon as they get their EAD

If you have work authorization and DHS says you can work, most likely you can work with that authorization- you can work.  When you get your green card, you go back and update the card so that there is no restrictions.  In today's Trump climate, would you not dot the i's and cross the T's?  You must make sure your social security card matches the status you currently have.  Your local social security office can tell you what card you should have in relation to your immigration status.
