No need to be overwhelmed...it's actually a relatively simple process. He won't be the first overstay applying to adjust status, it's actually quite common. This guide has everything. http://www.visajourney.com/content/i130guide2

March 26, 2009: We become a couple!
September 10, 2009: Arrived for first meeting in-person!
June 17, 2010: Arrived for second in-person meeting and start of travel together to other areas of China!
June 21, 2010: Engaged!!!
September 1, 2010: Switched course from K1 to CR-1
December 8, 2010: Wedding date set; it will be on February 18, 2011!
February 9, 2011: Depart for China
February 11, 2011: Registered for marriage in Wuhan, officially married!!!
February 18, 2011: Wedding ceremony in Shiyan!!!
April 22, 2011: Mailed I-130 to Chicago
April 28, 2011: Received NOA1 via text/email, file routed to CSC (priority date April 25th)
April 29, 2011: Updated
May 3, 2011: Received NOA1 hardcopy in mail
July 26, 2011: Received NOA2 via text/email!!!
July 30, 2011: Received NOA2 hardcopy in mail
August 8, 2011: NVC received file
September 1, 2011: NVC case number assigned
September 2, 2011: AOS invoice received, OPTIN email for EP sent
September 7, 2011: Paid AOS bill (payment portal showed PAID on September 9, 2011)
September 8, 2011: OPTIN email accepted, GZO number assigned
September 10, 2011: Emailed AOS package
September 12, 2011: IV bill invoiced
September 13, 2011: Paid IV bill (payment portal showed PAID on September 14, 2011)
September 14, 2011: Emailed IV package
October 3, 2011: Emailed checklist response (checklist generated due to typo on Form DS-230)
October 6, 2011: Case complete at NVC
November 10, 2011: Interview - APPROVED!!!

September 23, 2013: Received NOA1 in mail (receipt date September 19th)

October 16, 2013: Biometrics Appointment

January 28, 2014: Production of new Green Card ordered

February 3, 2014: New Green Card received; done with USCIS until fall of 2023*

December 18, 2023:  Filed I-90 to renew Green Card

December 21, 2023:  Production of new Green Card ordered - will be seeing USCIS again every 10 years for renewal

No waiver is available for that nor are any family-based immigrants exempt from this requirement.

OP said she was sick and her to-be-husband has been taken care of her all those years. 

I just assume that financial situation will be tough.

I just think OP need to make sure that she has everything ready to go. Sometimes the problem lies in the things you've never expected.

I planned my case for almost 3 years, especially the financial stuff. :)

She would need a joint sponsor if she doesnt meet the income and/or and assets requirements.

Agree.  I don't see a "public charge" denial......after all, the fiance has been here for years without becoming a public charge.......

In summary, it took 13 months for approval of the CR-1.  It took 44 months for approval of the I-751.  It took 4 months for approval of the N-400.   It took 172 days from N-400 application to Oath Ceremony.   It took 6 weeks for Passport, then 7 additional weeks for return of wife's Naturalization Certificate..

Yes, we did face some financial issues due to my health conditions and all the hospital bills. But now, we have some saving and ready to build a business of our own. I can't run the business by myself so I will need to wait until he finish his adjustment of status then we can both legally own the business and settle down. We are financially prepared for his paperwork and everything now.

If possible, you guys should get married now, and file to adjust his status, because the new policy that will affect people who came in with student visas, and have fell out of status will be in effect August 9th. If you guys do not get married before that date, then he will need to return to his country and re-apply for a visa to come back which will be very hard considering the length of time he has been out of status.

So that will be the case if we file to adjust after August 9th?

Except for his overstayed, he hasn't been trying to work illegally or anything. Now, his family and I support him financially and he's never got into any trouble.

If you guys get married before the 9th, you guys will be good even if you file to adjust his status after the 9th. It will make more sense to just file before the 9th.
