We are currently filling out our affidavid of support, through the rapidvisa's income calculator, we figured out that my fiance makes 123% of the poverty guidelines, now we know we need 100% for the k1, but 125 for AOS, should we play it safe and use a cosponsor for k1 (to bring it to the interview), or do we only need one when adjusting the status?

If you feel unsure use a co-sponsor for the K-1 visa itself. Rather have it and not need it than need it and not have it.

While it is above the 100% line, the CO has final discretion as to whether you would become a public charge. Id play it safe.

That's what we will do, my finace really hates having to use one, but that's a pride thing so we shall play it safe

The focus should be on what will it take to put all your "ducks in a row"  for the CO.  In addition, you'll need someone with 125% later in your journey anyway....Good Luck.

Exactly, I know we would need one for AOS anyway.

Since we are now waiting for our petition to go to NVC, we won't revieve any letter from them? I'm assuming that's why we have to call and ask for the NVC number, in order to get a jumpstart on the medical and everything else, so we can schedule the interview as soon as possible
