The only advantage to the K-1 is it used to be much faster.

Well, there are a few other things to consider (at least, I was well aware there's not much difference in time from initial application to POE for K-1 vs CR-1 when I filed in May).

  • If getting married right away is impractical, then the time to POE difference is actually the processing time difference plus however long it would take to actually get married.
There are lot of reasons why it may not be possible (or least not practical) to marry right away. Travel time and/or travel cost may mean meeting on short notice (whether in the US, your fiancé(e)'s country, or a third country where you can legally marry quickly once you get there) isn't really possible. It may be difficult or impossible for your fiancé(e) to get a visitor visa for the US. Marrying in your fiancée's country may be impossible or require spending more time there than you can reasonably manage.
  • If your fiancé(e) is bringing minor children with him or her, in a lot of cases apparently there are cost and other advantages to the K-1/K-2 route (since this doesn't apply to my case, I didn't look into the details on this)
  • You or your fiancé(e) or both of you may be uncomfortable with being legally married and living apart for a year or more.

We want to do a destination wedding with close friends and family outside the US

She already has a B1-B2 Visa to travel here. Does this mean that if we are married in a destination that we could just apply for an AOS?

First post mentions a destination wedding outside the US and second post implies destination wedding inside the US, correct? I'll focus on the second scenerio: Your fiancé can enter the US with her tourist visa in order to marry you and then return to her country to initiate the CR1 process. Check out thread below:
