Our case was finally received at the London embassy last week. He had his medical on Monday and there has been a hiccup with one of the forms that he has to get sorted out but my main worry is the interview. Does he have to wait for packet 3 to schedule his interview? We haven't heard anything about getting packet 3 and I'm starting to get a bit worried. I'm worried about interview dates filling up and such and want to schedule this as soon as possible.

No you do not have to wait. "Packet 3" used to be a real packet of paper forms and paper instructions. Twenty or so pages. Now it's a letter of instruction telling you to go get your instructions off their website. Here https://uk.usembassy.gov/visas/fiancee-2/applying-for-the-visa/ scroll down to find the four steps.  You do  not need that letter for anything. They also include a copy of the approved petition, but you likely saw the petition your fiancé sent anyway. It is for you and not needed by the embassy.

Read the steps in the instructions and click all the links for what to bring (documents) to the interview. Like DS-160 should be first, get documents sorted....then pick an interview. Best bet is give you Medical time to get sorted and over to the embassy. I would pick an interview 2  weeks from when you get your things back to the medical people.  And dog them every day asking if it got sent yet. When they say yes, call again two, days later and confirm with hopefully somebody else on the phone. They are undependable lately
