There was a thread a few months ago discussing this that you may be able to find.  As I understand it, you need an unexpired green card to submit the application, but if it then expires before it is approved, your extension letter can be used to get approval.  You won't be able to use the kiosks though without an unexpired card, so you will have to go to a desk until your 10 year card is approved.

I didn't apply for mine with the extension - but I would assume as they have "extended" your green card it is considered valid and they should accept it.  My green card itself has never worked at a global entry kiosk - no one knows why.  I have always had to "look up the info" and then manually enter my green card number - then it works.  Once my green card "expired" and I had the extension letter - I simply went into the Global Entry system and changed my expiration date by a year, as stated in my extension letter.

Every CBP officer I have encountered seems a little confused by my extension letter, my expired greencard and global entry - but hand over everything and they have always let me know without more than a couple questions.

Good Luck!
