Don't let age fool you. Read the instructions,/forms, read them again, then read them again, and read them again. If you have questions then look for answers on this website or make a post and ask. I have seen many older people on this site get denials. Age does not matter. I was 20 years old when we started the K1 visa process. 

Your heart wants what it wants, but sometimes you need to slow down and think logically about things. Take time to get to know each other in person. It's cliche, but if it is meant to be then waiting/taking time won't ruin the relationship.

At some point, perhaps during her interview process,  The may look at how well the couple can converse and communicate.  And as others say,  they look at your "gross income".  It is a long process, months and months, and a LOT of money for the K1,  help with her expenses for travel to get her physical, the childs physical,  visas, interviews,  etc.. Then, the wedding,  then filing for things like Advance parole,  Green card,  EAD,  etc.. A long road.    As for work,   I don't know about how it is in Min,  but in places where there are casinos, (Nevada),  most have housekeeping staff who do not speak a lick of English.  Good luck on your journey, and keep in mind,  BE TRUTHFUL in any forms you complete for the K1.  You may also look in to the CR1 which takes a bit longer but half the price.   You go down there, get married, and file to bring your wife and child back.  In the meantime, work to get your bills down, etc..

K1 or CR1, the fees for you will be more expensive because 2 people are immigrating.  Often k2 is cheaper/easier for those with younger children.

does anyone know exactly all the documents she will need for the proccess up to the visa issuance?

i got this so far from looking..

 

passports

birth certificates for her and her son

vacicine records for her and her son

medical records

Picture IDs (for passports)

relationship evidence( started logging everything already)

 

i want to get a list so she can start gathering stuff and  hoping it will be less stressful on her if she has time to gather documents befor we start.

Yeah. But have in mind the processing times. Is gonna be at least seven months before doing the medical exams,so yes,you have time. Also you would be able to learn more about you process and the things that you are going to need.

I was going to suggest working was a good way to pass the time and get the fees paid. Also getting the documents rounded up is smart. Too many people try to scramble at the last minute.  

 

I also found myself as waiting for a spouse and decided to take "fun" weekend jobs to pass the time and offset the costs. 

 

Be aware on a K1 she can't work the first few months. The more time you can take off when she arrives the better.  Also a good time for her to study English. My husband was bummed to a degree because he found a job that wouldn't let him continue his free conversational classes.  Not sure what city you are in but libraries and community colleges an have no cost ESL classes. 

 

Try to think of a few other things she can do to have a meaningful day those months.  A spouse bored at home all day doesn't make for good moods. Though I realize this is not something you are worried about now.

I don't know why everyone is saying that she definitely needs to learn English when she is Mexican  Maybe because I'm in California but I interact with workers who don't speak much (or any) English quite often. At some of my favorite restaurants the staff only speak Spanish (or another language, depending on what type of restaurant it is) and they've been in business for quite a while. If where OP lives there's a large Mexican community his fiancée can probably easily find a job there. Also, here in California, almost all public services and even private companies customer services, offer you the option to speak to a Spanish speaker. It's quite easy getting by just speaking Spanish. 

 

Of course, it all depends on what kind of job she wants. Not speaking English definitely limits your options, especially if you want a better paying job. But if she learns English, being bilingual might be an advantage (especially if she wants to work in customer service, such as at a call center). But if she's not picky, she can get by just speaking Spanish and having some basic English skills. 

 

OP, have you considered a CR-1 visa? It's a better option because she will have the ability to work and travel right away and it's overall cheaper.

have considered itm but the process to marry in mexico is fairly difficult especially if your tryong to follow the traditions in mexico 😅
