Gap in Between Job Changing- AOS

I tried to look back into older posts but couldn't really find the exact answer I needed; Please forgive me if this has been discussed in the past. 

As per my timeline we received our NOA2 on 6/19. I am the USC petitioner. We are trying to get some documents together before the interview (I know, it's still at least few months away).

I have been under current employment contract for the past 3 years and the pay meets the annual income requirement. I have all the tax form/W-2/pay stubs during that period to prove this as well. My current job is considered "a training period" and my contract will end on 6/30. I already signed the contract for my next job back in April but won't be able to start until October. Now I'm looking at the I-134 form and realized that there is a chance my fiancee could have her interview scheduled before October, while I'm unemployed. My question is, should I just send her the I-134 form listed as me, the petitioner as unemployed, along with the most recent tax form/W-2 (maybe with a copy of signed contract for my new job) right before her interview or fill out the form signed as of today's date and list myself as employed with  proof of employment? I already earned more than 125% of poverty level for this calendar year but obviously have not filed tax for this (and I don't think this even matters for I-134). Or should I just have her schedule the interview on a later date (she will hate me for life - something I'd like to avoid if possible)? I know it's always safer to have a joint sponsor (which I'm also looking into), but first wanted to reach out and see what you all think. You say you have already signed a renewal. So take the renewal documents with you if the interview happens during the gap, and if possible, have the employer give you a letter to back it up.

Bring the renewal letter to the interview. Don't offer more information if they don't ask about it. Because usually, if they see your W-2 or tax transcript meet the income requirement, they will not ask for other documents (just my experience).

 

Aside from that, the subject of your post is a bit confusing. You are in the middle of K-1 visa application. Not adjustment of status yet.

Thanks for the reply guys, apologies to the confusion. The new job I'll be starting in October is through different employer, so it's technically not a renewal. I did ask for a letter from my current employer but they also put in the end date for my contract which is 6/30. Should I just keep this until they specifically ask for this? Sorry, I know it's a lot of questions. Thanks again.

So basically you have two letter with you? One letter is with previous employer that end of 6/30 and another letter is with new employer? Bring both and don't submit it if they don't ask for it. As long as you make the minimum income requirement and you have your W-2 or tax transcript to proof that, you will be fine. My interview experience before, they ask about W-2 or tax transcript. And they didn't ask for anything else after that (even I do have a letter from my fiance employer).
