K1-When should I send I-134

Timeline

I got my NVC number about a week ago after calling them, and now it says in transit. I never got anything in the mail in regards to it, or an email. So I'm guessing its time I get everything together and send to my fiance in Tunisia. It takes about a week and a half for him to get packages from me. And based on other timelines I have about a month and half before his interview. They are scheduling them pretty quickly there.  Is it too early to get stuff from my work and bank? I mean if they see its a month old from the time I got the proof will that be ok at his interview? I don't want to wait too much longer to get everything but also worried about them making an issue about the date I got the financial proof. Or am I worrying to much lol? Also, when I send him the I-134  plus everything else like ongoing proof of relationship, pics, and so on does he just hang onto that until his interview or does he have to drop them off at the embassy before they schedule it? Thank you for your help!!!

You should send everything now if you can. No need to wait any longer. Are you sending any Tax returns or IRS Transcripts? If you are then send them for the last two or three years.

Well on the list of stuff to send that is stated on the I-134 IT doesn't say we have to send tax returns unless were are self employed? Says we should send stuff from the bank and a letter from our job. I have already given my fiance my tax returns the last time I visited but it seems like they aren't required. What do you think? Thank you again :)

You are right, tax return is a must for self-employed, but still work for individuals as well since it shows your annual income in the last two or three years. Although pay stubs ,w2,  bank account with employer letter is sufficient, but the IRS would be another addition to the documents. So really its up to you what you want to send. The more the merrier.
