OP, is your spouse a USC or green card holder? What is your goal/plan longterm? 

 

Since you spent most of your time in the USA in 2018, your best bet is to get her to visit Canada in a couple month. Not sure they going to let you visit again so easily unless you can have major ties back home still.

My spouse is a USC, our long term plan is to be together all the time. I did send the I-485 today.

Figured that question was more in Canada or USA longterm. Hopefully you do i765/i131 soon, since you will be stuck on your hands for 6 months now waiting. Also need insurance now.

 

Were you able to send a lot of documents with your i485 application or was it rather slim? If slim, can spend time building those documents. In meantime look at the process for Canada, issue will be you need a letter to explain you promise to go back and where you would live but assuming you got ties that should be possible to make. Also the Canadian process is a lot more paperwork upfront and bit easier timeline, maybe she will prefer Canada never know got the free time now might as well.

Did you send the I-765 and I-131 as well? Without I-131, you cannot travel. If you leave and try to come back, you'll be denied entry and your application will be deemed abandoned.
