Low income tax last year, Good income this year but no income tax

I got low income tax last year (around 10k, and Im in school), but now I will have more than 25k annually this year because I graduated and got a new job, but I dont have the tax return for that yet.
Will pay stubs work for proof of income? right now I have 6 months worth of pay stubs for my recent job. I'm in approval process right now and its been 3 months. It may or may not come anytime soon, but Im pretty sure it will not reach the tax day for me to provide income this year. Thanks.

Yes, I can get an employment letter from the company I am working for. So pay stubs + employment letter will work? are there any more that I can add to increase the chances of approval? how many pay stubs do I need to provide?  thanks for the reply

I did 6 months worth. You probably should provide a copy of the "low" income tax return, but your current income should override such concerns.

How many previous income tax do I need to provide? I file taxes every year and keep them so I can provide as many as possible.
